Turkish Pine Nuts
Pinus pinea
Long, slender, cream-coloured kernels from the stone pine. The most aromatic of the pine nut origins and a premium-segment product.
Turkish pine nuts come from the cone of the Mediterranean stone pine (Pinus pinea). The kernels are distinctly long and slender, high in oil, and retain their characteristic buttery aroma when cooked. The Kozak plateau near Bergama is considered the traditional heart of production.
Because the cone takes years to mature and shelling is a multi-stage process, Turkish pine nuts are among the most expensive nuts in the world. Their high oil content means they are held in cool storage and preferably shipped vacuum-packed.
