Pakistani pine nuts (chilgoza) are gathered from Pinus gerardiana forests in the Himalayan foothills. The kernels are shorter and fuller than Turkish pine nuts and longer than the Chinese origin; the aroma is pronounced but softer.
Because harvesting is largely manual and the collection season is short, annual supply fluctuates. We therefore recommend planning orders at the start of the season. Lots are additionally reviewed for broken kernels and colour defects.
