Chinese pine nuts come from Pinus koraiensis. The kernels are markedly short and teardrop-shaped. The aroma is more neutral than the other origins, which makes them useful in recipes where spices and sauces dominate.
Continuity of supply and unit cost make this the most widely used origin in high-volume industrial production. As with all pine nuts the oil content is high, so it should be stored cool and dark, preferably vacuum-packed.
