Corylus avellana
Round Black Sea hazelnut kernels. Raw, roasted, blanched, sliced and as flour, in calibres suited to the chocolate and bakery industries.
Türkiye accounts for roughly two-thirds of world hazelnut production. The Ordu, Giresun, Trabzon and Sakarya belts are the reference regions for the international chocolate industry thanks to their balance of oil content and aroma.
Kernels are separated by calibre (11–13 mm, 13–15 mm and so on), with the roast level set according to end use. In blanched product the pellicle is removed, making it suitable for light-coloured fillings and creams. Sliced and flour forms are used in bakery for surface and dough applications.
