The decisive factor in drying orange slices is keeping slice thickness identical across every lot; a difference in thickness changes both drying time and final colour. Thin, even slices give the characteristic translucent look when held to the light.
The essential oils in the peel are what carry the aroma, so the fruit is dried unpeeled. Used in herbal tea and infusion blends, cocktail presentation and bakery.
