Pistachios
Pistacia vera
Turkish pistachios with a deep green kernel and pronounced aroma. Available in-shell (naturally split), as kernels and slivered; raw or salted and roasted.
The Antep pistachio is one of Türkiye's geographically protected products, grown principally in the Gaziantep, Şanlıurfa and Siirt basins. Turkish types stand out for the depth of their kernel colour and the intensity of their aroma, which is why they are preferred in baklava and ice cream where colour carries the recipe.
In-shell product is classified by separating the naturally split nuts. Kernels are sorted for shell fragments and discoloured nuts; peeled (green) kernels and slivered forms are available on request.
